Nearly 600 entries from across Queensland have converged on Rockhampton for the Australian Meat Industry Council competition, the state's premier showcase of sausage and burger craftsmanship.
A Statewide Showdown of Craft and Creativity
Independent butchers across the state have entered six sausage categories and three burger categories, with industry and amateur judges evaluating each product on workmanship, flavour and creativity. The competition, organised by the Australian Meat Industry Council, is the largest of its kind in the country.
This year's event marks the first time the competition has been held in Rockhampton, moving from its previous home in Toowoomba to encourage greater participation from remote butchers whose products might otherwise spoil during long travel.
Unconventional Flavours and Passionate Judges
Entries ranged from traditional Australian, beef, pork and lamb sausages to inventive combinations including chicken and white chocolate, Wagyu with wasabi and soy, and even camel and crocodile-inspired varieties. Spicy jalapeno sausages were a particular favourite with amateur judge Vicky Aubsich, who prefers a finer texture over a coarser one.
Fellow amateur judge Greg Roberts said he looks for spice, a pleasant taste, a pleasant mouthfeel and a really nice aftertaste that is not too strong or too powerful. Brisbane-based sausage connoisseur Gary Thompson noted that butchers are transforming sausages from everyday products into gourmet items with their own signature twist.
Building Community and Looking Ahead
Chef and previous entrant Billy Gibney said the competition encourages butchers to develop their craft and build connections with their local communities. He noted that while independent butchers may be a 'dying breed', people are increasingly returning to small businesses because of the pride and care they show in their work.
The Queensland competition winners will progress to the national finals in Melbourne. The event also expanded to include evening sessions so locals working during the day could participate, and comes 262 days before the city's largest meat-related event, Beef Week.
